Program Content
Under the guidance of experienced instructors, you will explore the techniques and flavors that define French pastry arts. Since 90% of the program is dedicated to practical lessons – including photography sessions – you will graduate with the skills to create, refine, and present your work to a professional standard.
The program is offered at two campuses – Meudon, just outside Paris, and Yssingeaux in the Haute-Loire region. Both feature state-of-the-art facilities and equipment, and the school assists new students with finding accommodation.

What You Will Achieve
Upon graduation, you will have the skills required to create signature pastries according to the Ducasse philosophy, with a strong awareness of emerging trends in the pastry world. You will be able to:
- Plan and manage production steps
- Select the right materials and ingredients for pastries, chocolate, confectionery, and viennoiserie
- Apply production and preparation techniques with precision
- Assemble and finish products to professional standards
- Work in full compliance with hygiene, traceability, and safety standards
