Perfection by Confection – Mastering the Art of Pastry

This one-year diploma program is designed for those who are passionate about baking, chocolate, and desserts – whether you are at the beginning of your career, looking to change paths, or dreaming of starting your own business.

The program provides a solid introduction to Swiss and European pastry arts, with a focus on practical work, technical precision, and creative expression.

Through intensive, hands-on training, you will develop fundamental pastry techniques and refine the art of creating both classic and modern desserts, baked goods, and chocolate products to international standards.

This one-year program is delivered in Le Bouveret near Montreux, located in the French-speaking part of Switzerland. Accommodation, meals, and health insurance are included in the price during your time at the school. All instruction is conducted in English. The program is eligible for student loans (CSN).

Program Structure

  1. Semester 1 – Pastry Essentials, Le Bouveret
    1. European Pastry Foundations I
    2. European Pastry Foundations II
    3. Food hygiene and safety standards
    4. French or German
    5. Upon successful completion: Swiss Certificate in Fundamentals of Pastry Arts
  2. Semester 2 – Advanced Pastry Skills, Le Bouveret
    1. Swiss chocolate artistry and international pastry
    2. Dessert presentation, plating, and styling
    3. Special diets and balanced nutrition
    4. French or German
    5. Upon successful completion: Advanced Swiss Certificate in Fundamentals of Pastry Arts
  3. Internship
    1. 6-month internship in Switzerland or internationally
    2. Upon completion of the internship and studies: Swiss Diploma in Pastry Arts

We provide every student with individual guidance through the entire application process, student loan (CSN) arrangements, and other practical preparations before starting your studies. To apply for the pastry program, you will need a CV, a motivation letter, and certificates from previous studies. A genuine passion for the subject is what matters most to us!
